Hello my darlings and welcome to my first recipe blog post!!! These yummy sugar cookies are perfect for a fairycore picnic and use coconut oil instead of butter so they are completely vegan. Of course you can always eat them without any icing but the icing and edible flower petals do add some lovely fairycore flair. Please either use dried flowers from your own garden that you know are pesticide free or purchase some flowers specifically for consumption.
Ingredients for the cookies
- 50g (1.8 oz) coconut oil in liquid form or at least very soft
- 75g (2.7 oz) granulated sugar
- 150 g (5.3 oz) plain flour
- 5 to 6 (6 to 7.2 US) tablespoons water
- pinch of salt
- 1 (0.3 US) teaspoon vanilla essence
- 75g (2.7 oz) icing sugar
- 1 to 2 (1.2 to 2.4 US) tablespoons water
- dried rose (or any other edible flower) petals
How to make the cookies
Step 1
Preheat your oven to 180oC or 350oF .
Step 2
Place the coconut oil and sugar in a mixing bowl and stir to combine.
Step 3
Add the vanilla essence and stir to combine.
Step 4
Then add the sifted flour and a pinch of salt and mix into a dough, adding the tablespoons of water if the dough is too dry.
Step 5
Shape however you like then place on a tray greased with coconut oil and bake for about 15-20 minutes or until golden brown.
Step 6
While the cookies are baking you can make the icing by mixing the water and icing sugar until smooth.
Step 7
When the cookies have cooled down you can ice them and sprinkle the flower petals on top.
