How to Make Chocolate Chip Banana Pancakes

Hello! And welcome to another fairycore food recipe! This is an easy way to quickly use up those overripe bananas languishing in your fruit bowl. When coming up for the title of this recipe blog post I had a bit of a conundrum. Personally I would call these flapjacks or crumpets instead of pancakes, but when doing my keyword research I discovered that chocolate chip banana pancakes are searched for way more than flapjacks or crumpets. I think we know which country to thank for that (it’s the USA, duh). So please do not take this US-centric title (too) personally.

Ingredients

  1. 3 bananas (overripe is best)
  2. 2 large eggs
  3. A half cup self raising flour (or plain flour plus a teaspoon of baking powder)
  4. Pinch of salt
  5. Chocolate chips (measure with your heart)
  6. Cinnamon (optional)
  7. Coconut oil for frying
  8. Honey or syrup to serve

Instructions

Step 1

Peel and mash the bananas in a mixing bowl. Sometimes I blend the bananas instead but either is fine. Blending the bananas results in a fluffier pancake/crumpet/flapjack.

Step 2

Crack the eggs into the banana mixture and whisk thoroughly.

Step 3

Then add the flour, salt, chocolate chips, and cinnamon, if using.

Step 4

Turn your stove on low/medium heat and place your frying pan on top. Once the pan has warmed up you can place a some coconut oil so that it covers the bottom of the pan.

Step 5

Place a generous spoonful of your banana batter in the centre of the pan. Wait until bubbles have formed on the top and the bottom is crispy before flipping over to fry the other side for about a minute or so. Repeat until all your banana batter is finished. This recipe makes about 5 medium sized chocolate chip banana pancakes. Serve with honey or syrup or whichever toppings you prefer.
